3 Easy Dinner Recipes for Busy {and Quarantined} Moms

Does the thought of being quarantined for the foreseeable future AND still having to cook dinner for your family overwhelm you? Do you dread coming up with dinner recipes to feed your family during the week, now that social distancing is the recommendation and you can’t just pop in to your favorite restaurant when you don’t feel like cooking? Maybe you’re getting bored with the same go-to recipes you’ve been using over and over again and are ready to switch it up. If this is the case for you, I’ve got you covered.

Two of the recipes I’m sharing have Asian inspired ingredients, which is a popular flavor palate in my house. The crockpot recipe I chose is a popular one, but it’s too much of a gold mine not to include it.

I love the recipes I’ve chosen because they are easy, have minimal ingredients and do not require a lot of prepping and cook time. All the requirements needed for busy moms.

30-Minute Healthy Asian Beef Bowl

Added bonus with this dinner recipe, my kids love it too! Additionally, I always buy extra ground beef to double the recipe for leftovers because it’s THAT good.

3 Easy Dinner Recipes for Busy {and Quarantined} Moms


  • 1/2 tbsp olive oil
  • 1 cup onion, roughly chopped
  • 1 tsp fresh ginger, minced {I use a cheese grater to do this}
  • 2 gloves garlic, minced
  • 1 lb. lean ground beef
  • 1/4 low sodium soy sauce
  • 1/4 brown sugar

For serving- crushed peanuts, green onion, bag of steamed broccoli and jasmine/basmati rice


In a large skillet, heat the olive oil and cook onions on medium-high heat until the onions are soft. Add in the ginger and garlic and cook for a few minutes.

Add in the ground beef and break up meat into small pieces until its cooked all the way through. Drain the extra liquid when you’re done. Add in the soy sauce and brown sugar, stirring to mix everything together and let it simmer for 5 minutes.

For dinner, serve over rice and add the toppings.

That’s it! This meal is done from start to finish in 30 minutes! If you want to make it easier on yourself you can sub the fresh garlic and ginger for ground, but I prefer the flavor of the natural ingredients.

Mississippi Pot Roast

This is another crowd pleasing recipe in my house, and in many of my friends and families’ houses as well. It’s delicious, easy and done in the crockpot {heck yes!}. Everyone needs a quick and easy staple crockpot recipe in their back pocket. Prep in the morning, done in the evening. Boom.

  • 2-4lb chuck or shoulder roast
  • 1 packet of au ju gravy
  • 1 packet of ranch dressing mix
  • 8 pepperoncini’s
  • 8 tbsp butter

*I also add carrots and mushrooms with about 2-3 hours left of cooking.

For serving- I usually serve it with mashed potatoes or cauliflower mashed potatoes or you can do roasted potatoes. Whatever you prefer!


Put the roast into the crockpot. Dump the seasoning packets on top. Then add the pepperoncini’s and butter on top. Cook on low for 6-8 hours. I let mine cook closer to 8 hours.

Garlic Honey Ginger Glazed Salmon

I’ve been making this recipe for years. It comes out delicious every time I make it. I’ve even tried to veer off track and try other salmon recipes, but I keep coming back to this one.



  • 4 salmon filets
  • 1/2 cup honey
  • 1/3 low sodium soy sauce
  • 2 tsp minced or chopped garlic
  • 1 tsp minced fresh ginger {again, I use a cheese grater}

For serving- use whatever vegetable and carbohydrate you prefer. I’ve done broccoli and rice or broccoli and mashed cauliflower/potatoes, but this time I did asparagus and roasted sweet potatoes in my air fryer. I love that you can mix up the sides.


Place the salmon in a zip-lock bag. Whisk together all of the ingredients. Pour half of the sauce over the salmon, coating them thoroughly. Let them marinate in the refrigerator for 15 minutes up to 4 hours.

When ready to cook, preheat oven to 350. Line a baking sheet with foil. Bake in the oven for 15-20 depending on your oven. I usually broil mine the last 3 minutes of cooking to get crispier edges.

While the salmon is cooking, pour the remaining glaze in a saucepan and bring to a broil. Once it starts bubbling reduce the heat to low for 5-6 minutes stirring occasionally. Once it’s done, remove from heat and allow to thicken.

Garnish the salmon with the glaze, add your sides and voila you have a yummy meal.
