Dairy Free Lactation Cookies

We went out for burgers this past weekend, and I didn’t even ask if they buttered the buns and if so, to please hold off on it. My dairy-free-while-nursing confidence and knowledge has grown so much these last four years. We are on our third baby here. And third boy. While I don’t consider us pros just yet, there are some infancy actions that I’ve come to terms with, one being that maintaining a dairy-free diet while breastfeeding makes for a happier, less spitty baby of mine.

My first two boys didn’t have a dairy allergy but an intolerance which seemed to irritate reflux, so by the third round, around one month I went ahead and eliminated dairy.  I’m not sure whether our third child’s stomach is “stronger,” or if an early choice to eliminate dairy warded off problems, but breastfeeding seems much smoother this time around. Either way, my love for these cookies runs deep.

My sweet friend Nancy made a batch when our second son John was in the NICU and I needed to pump while in the hospital for my milk to come in.  I quickly adapted them to be dairy free when I cut it out of my diet, and honestly, I just might not make a “normal” chocolate chip cookie again! {Sorry hubs!}

Dairy Free Lactation Cookies

Ingredients ::

  • 2 teaspoons of flax meal + 2 teaspoons of water {let it sit 3-5 minutes}
  • 1 cup of coconut oil
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1-1/2 cups all-purpose flour
  • 4 tablespoons brewer’s yeast
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups oats {old fashioned, uncooked}
  • 1 cup of chocolate chips

Directions ::

  1. Preheat oven to 375°F. Spray cookie sheet with non-stick spray or line cookie sheets with parchment paper for even easier clean-up.
  2. Combine flax meal and water in small bowl.
  3. Combine flour, baking soda, brewer’s yeast, and salt in a medium bow. Mix well.
  4. In large bowl, beat oil and sugars until creamy.
  5. Add egg , flax seed meal mixture, and vanilla; beat well.
  6. Add combined dry ingredients and blend.
  7. Add oats and chocolate chips; mix by hand or spoon. Drop dough by rounded tablespoonfuls onto prepped cookie sheets. The oatmeal can make it tough to keep the dough together. Just squish it! {Technical cooking terms right there, friends!}
  8. Bake 8 to 11 minutes.
  9. Cool 1 minute on cookie sheet, then cool completely on wire rack {or slide parchment paper off}.
