Update :: A BIG Step Towards Healthy Living

We are still here! 15 or so days into our #Whole30 challenge, and we are feeling G-O-O-D! We powered through the “detox” headaches, tiredness, and cravings, and we’ve come to the midpoint ready to bring this thing home! I’m not going to say it’s been smooth sailing – we had a hard time finding compliant bacon, that morning cup of coffee just doesn’t feel the same without some type of cream product in it, and it’s hard to fight past the temptations teasing you on the daily! {Especially the mega pack of Babybel cheese your daughter picked out at Costco that stares at you from the fridge everyday.} But we are staying strong! We’ll get you a total recap when we get through the full 30 days, but for now we are going to leave you with a few staples that are keeping us going at the moment.

Breakfast ::

Any combo of eggs, bacon, veggies, and hash is rocking my world every morning.  There are so many awesome combos you can pull together. My favorite being diced sweet potatoes sauteed with onions and peppers in ghee. Throw in some chopped up chicken sausage and top with compliant salsa – I like to add a few slices of avocado and a side of bacon for good measure!

Lunch ::

Lunch is all about the leftovers.  I’ve had to get in the habit of making larger dinners, so there is always something available for lunch the next day.  Chicken, greens, fish, shrimp…whatever, just think BIG at dinnertime and you’ll be set the next day.  If leftovers don’t sound great, we’re all about the salad over here.  Spinach + chopped apples + chopped peaches + pecans or almonds + a hard boiled egg or two + our absolute fave salad dressing {recipe below}.  Combine all ingredients in a large tupperware if you’re on the go or bowl if you’re at home and done!

Best Salad Dressing/Condiment/Dip ::

Coconut Milk Ranch which is 100% straight from the blog of one of our favorite whole30-ers.  See the original recipe here or grab a mason jar with a lid and the following ingredients – 1 can of coconut milk, 1 tbsp of spicy brown mustard, 1 tbsp apple cider vinegar, 1 clove garlic, 2 tbsp finely chopped chives {I use dill instead}, 2 tbsp finely chopping thyme, 1 tbsp finely chopped basil, 2 tsp finely chopped oregano, 1 tsp kosher salt, 1/2 tsp black pepper.  Throw it all in the jar and shake!  I’m pretty sure this is the one thing keeping Josh loyal to the challenge.  He uses it on everything! My kids also love it and will dip their veggies at every meal in this liquid gold if I would put it on their plates!

Favorite Snack ::

Chopped whole apple + 1tbsp-ish of chopped pecans + a tbsp of coconut flakes + a sprinkle of cinnamon.  I wish I had this right now, but it’s past snack time in this house!

Dinner ::

My house LOVES salmon, and spicy. I found a great recipe for a kicked up grilled salmon topped with a cool dollop of guacamole. I put a little oil on the salmon filets and then sprinkle cumin, garlic salt, chili powder, and papirika. These go in the fridge for 30 minutes, and then I grill them up – I won’t lie – with my George Forman Grill! The guacamole is just a simple mashed ripe avocado with a sprinkle of garlic salt and a touch of lemon juice. The spicy fish and the cool buttery guacamole blend perfectly together!
